Abstract
Seasoned extruded snack products have a porous structure, making them hygroscopic and susceptible to quality deterioration during storage due to moisture absorption and oxidation of lipid and seasoning components. One approach to extending shelf life is the application of Modified Atmosphere Packaging (MAP) technology using nitrogen in metalized packaging. This study aimed to determine the effect of nitrogen MAP application on the shelf life of seasoned extruded snack products. The study was conducted using the Accelerated Shelf Life Testing (ASLT) method with the Q₁₀ model by storing the products at 47°C with 55% relative humidity (RH). The observed parameters included hedonic sensory evaluation (color, aroma, taste, and texture) and moisture content analysis. The results showed that nitrogen application was able to maintain the sensory quality of the products longer compared to products without nitrogen. The sensory critical limit for products without nitrogen was reached on day 25, while products with nitrogen reached the critical limit on day 35. The sensory attributes that experienced quality deterioration first were taste and aroma. Moisture content changes during storage showed fluctuating patterns in both treatments. Based on the Q₁₀ model calculation, the estimated shelf life of products with nitrogen was 8.9 months, while products without nitrogen was 6.4 months. Therefore, the application of MAP technology using nitrogen in metalized packaging was effective in extending the shelf life of seasoned extruded snack products.
