Abstract
Mackerel tuna (Euthynnus affinis) is a widely traded fishery commodity in traditional markets, yet is highly susceptible to quality deterioration and misuse of hazardous preservatives. This study aimed to evaluate the quality and safety of fresh mackerel tuna in three traditional markets in Jambi City (Handil Market, Angso Duo Market, and Pasir Putih Market), as well as to observe the condition of facilities, infrastructure, and sanitation hygiene of the fish stalls. The parameters evaluated included sensory testing, microbiological testing (Total Plate Count/TPC, Escherichia coli, and Salmonella sp.), and qualitative chemical testing for formalin residue detection. Observation results showed that Handil Market and Pasir Putih Market were categorized as Good (score 75), while Angso Duo Market was categorized as Fair (score 50), with all three markets consistently recording Serious deviations in the availability of water and ice for cold chain maintenance. All samples met the requirements of SNI 2729:2013 for sensory parameters (scores 7.03–7.09), microbiological parameters (TPC 5,000–18,000 colonies/g; E. coli <3.0 MPN/g; Salmonella sp. negative/25 g), and chemical parameters (formalin negative). These findings indicate that fresh mackerel tuna sold in three traditional markets in Jambi City during morning sampling generally met food quality and safety standards in accordance with SNI 2729:2013, although suboptimal facility conditions, particularly regarding cold chain management, require immediate attention to prevent accelerated quality deterioration in the future.
